\nFresh organic eggs.
\nVeracruz sauce (1).

\nConsorcio Serrano<\/em> slices of ham.
\nRoasted tortillas.

\nColored peppers – roasted and peeled.
\nDiced tomato.
\nChopped garlic.
\nChopped onion.
\nPickled g\u00fcero chile.
\nOlive oil.<\/p>\n
\nFry the garlic, the onion, and the peppers in the oil. Saut\u00e9 by stirring\/moving
\nconstantly for 5 minutes, add the diced tomato, the chiles, and stew in a covered pan
\nover gentle heat for 20 more minutes. Add salt to taste.<\/p>\n
\nSliced potato.
\nCanola oil.
\nGarlic confit.
\nBay leaf.
\nBlack pepper.

\nPlace all the ingredients on an oven tray and bake at 150 \u00baC for 40 minutes. The potatoes have to be very soft but not as soft as mashed potatoes.

\nPlace the saut\u00e9ed potato slices and the Veracruz sauce at the bottom of a baking dish. Crack the eggs over the mixture of potatoes and sauce, add more sauce and slices of Consorcio Serrano<\/em> ham and g\u00fcero chiles.
\nStep 3<\/em>
\nBake until the egg whites settle and the yolks are fluid but creamy. Finish off with slices of raw Consorcio Serrano<\/em> ham.
